Amazing chicken lasagne ready in just 1 hour!

This amazinggg chicken lasagne is honestly the most perfect dish to serve on a Saturday night with a little slice of garlic bread and a little glass of wine. No matter if its for you and your partner, yourself enjoying some self care time, the full family, no matter when, where or who, this easy, quick, tasty lasagne is perfect for every occasion.

It only takes around 20 minutes to prepare and an extra 30- 50 minutes to cook! This awesome dish feeds 6 to 8 servings, the white sauce is replaced with a quick creamy sauce instead. There are fewer layers than in a traditional lasagne but it’s still creamy and delicious. So what are you waiting for? Let’s get started on this, and I promise, it will be one of the best meals of your life!

Amazing chicken lasagne- ingredients!

There is a few ingredients that you will need in order to make this amazing meal, but I promise, every ingredient is totally worth it and gives it that amazing burst of flavour! See the list bellow;

For the chicken mixture

  • 2 tbsp olive or sunflower oil
  • 500g- 1lb- 2oz boneless and skinless chicken thighs, chopped
  • ½ red chilli, deseeded and finely chopped
  • 2 large garlic cloves, crushed
  • 200g- 7oz button mushrooms, sliced
  • 200g- 7oz baby spinach
  • 2 tsp cornflour
  • 200g- 7oz crème fraiche
  • 1 tbsp freshly chopped flatleaf parsley

For the sauce

  • 1 x 400g tin chopped tomatoes
  • 2 tbsp sun-dried tomato paste
  • 1 tbsp chopped thyme leaves
  • salt and freshly ground black pepper

To assemble the lasagne together just use 6 lasagne sheets preferably fresh and around 150 grams of grated cheddar.

Now that we have all our ingredients, you will need a ovenproof dish and it is time for our to get started making our amazing chicken lasagne!

Amazing chicken lasgne- method!

Step 1
First things first, let’s pre heat the oven. Pop it on to 200C or 180C fan. To make the chicken mixture, put the oil in frying pan over a high heat. Add the chicken pieces and fry quickly until golden but not cooked. Add the chilli, garlic and mushrooms and fry for a few moments. Then you want to add in the spinach and stir it until wilted.

Step 2
Next you want to measure out the cornflour into a small bowl and stir in 2 tablespoons of water and mix and combine it all together until it is smooth. Set this to the side for just now. To make the sauce, combine and mix the tomatoes, sun dried tomato paste and thyme in a bowl. Season generously with salt and pepper and mix well, taste a small amount to see if more seasoning is needed.

Step 3
See, we are already on step 3 of our chicken lasagne! Next we are going to prepare to assemble our lasagne all together. You want to soak the lasagne sheets in a shallow dish filled with boiling water for a few minutes until soft. This is optional (if you like your lasagne sheets soft do this, if you don’t really have a preference you can put them in uncooked and they will soften in the oven as they absorb the sauce!)

Step 4
Now we are onto the final step of your amazing chicken lasagne! Spoon a third of the chicken mixture into the oven dish. Spoon a third of the tomato sauce over the chicken. Arrange 3 lasagne sheets on top. Repeat the layers again. Finish with a final layer of the chicken mixture and sauce (making three layers of chicken mixture and sauce, and two layers of lasagne sheets).

Sprinkle the top with grated cheddar and bake for 35-40 minutes, until golden-brown and cooked through. Serve with salad or garlic bread and enjoy!
