A quick lunch at work? Any reason that you have been looking for a great meal, this is the one.

Ginger chicken fried rice ingredients!

This recipe only requires a few ingredients to make, and each and every ingredient is worth it! Here is the list of ingredients that you will need;

  • 500g boneless, skinless chicken thighs that are cut into bite-size pieces
  • 2 tbsp of golden caster sugar
  • 3 tbsp of soy sauce
  • ½ tbsp of fish sauce
  • 3 tbsp saké
  • 30g gi1nger, peeled and finely chopped
  • 300g basmati rice
  • 1 tbsp  of neutral-tasting oil, such as vegetable
  • 1 chicken stock cube
  • 2 star anise
  • 2 tsp of sesame oil

To serve

  • 1 tbsp sesame seeds
  • 4 spring onions that are finely sliced
  • 1 tbsp crispy chilli oil
  • 2 tbsp of crispy onions
  • steamed broccoli (optional)

Ginger chicken fried rice- method

The method is super easy, and should only take around 15 minutes to prepare, and 30 minutes to cook! Super quick, super tasty and super easy!

Step 1
first step is to chop up your chicken into small pieces, and pop them in a bowl with the sugar, soy sauce, fish sauce, sake and half the ginger. Cover this bowl and pop it in the fridge fir at least half an hour, I recommend popping it in while you prepare your rice!

Step 2
Next we are onto preparing the rice, tip the rice into a sieve and rinse thoroughly, mixing it around until the water runs clear, then set this to the side. Heat up your measured out oil in a tall-sided saucepan or flame proof casserole dish over a medium to high heat and cook the chicken along with the marinade for 10 mins, stirring often until browned all over. Move this over to a bowl using a slotted spatula and set it to the side.

Step 3
Stir the rice into the pan and crumble in the stock cube, then tip in the remaining ginger, the star anise, sesame oil, ¼ tsp salt and 600ml cold water. Bring this mixture to a boil then return the chicken and any resting juices to the pan. Lower and reduce the heat to a low flame or low heat. Once you have done that, cover it and let it cook for at least 15 minutes, but not too much that it will start to burn!

Step 4
Remove this from the heat and leave it at the side. Divide the chicken and rice between four plates. Top with the sesame seeds, spring onions, chilli oil and crispy onions, if you like, and serve with a side of steamed broccoli. There you have it! Your ginger chicken fried rice is ready to serve! It was super easy to make and the dish is perfect for family dinner, quick and easy lunch at work, a nice side to go along with your meal, and everything you can think of!
