Favourite 3 spring cocktails!- quick, easy and tasty recipes!

The easter bunny is out, easter eggs are on shelves in the shops. Spring cleaning, baby lambs, all the flowers start to grow, mini egg recipes, all of this shows one time. It is time for spring! These cocktails will get you right in the mood to be sat out the back relaxing in the sun, cold glass in hand, feet up and letting the world go by, these are the perfect drinks to make and enjoy!

Here is all the ingredients you need to add into your drink to make it taste amazingggg-

  • 80ml of gin
  • 50ml of amaretto
  • 50ml of double cream
  • 1 tsp of lemon curd
  • ¼ tsp of vanilla paste
  • a small handful of ice
  • edible flowers that you will pop on top to serve

That is it! Barely any ingredients but this delicious drink is still bursting with flavour, and you will fall in love every single sip, it works like a potion!

Method
The method is super easy, all you want to do is pop the gin, amaretto, the double cream, the lemon curd, and the vanilla paste into a cocktail shaker (if you do not have a cocktail shaker then a great alternative us mason jar.

Add in a handful of ice and shake it, keep shaking until the outside of the shaker is actually cold to touch, and Strain into two small cocktail or coupe glasses and garnish with edible flowers before serving train into two small cocktail or coupe glasses and garnish with edible flowers before serving. After this it is ready to serve and enjoy in the spring sunshine!

Rhubarb gin- spring cocktail no.2!

The next cocktail is by no means my second favourite, I love it as much as the first and the last! Here is what you need to make your spring cocktail come to life;

  • 1kg pink rhubarb stalks
  • 400g caster sugar (don’t use golden – it muddies the colour)
  • 800ml gin

That is literally it! Just 3 ingredients that is going to make your mouth water even just thinking about this tasty drink!

Method
This method is a little longer than the first cocktail, but it is still super simple and end up super tasty!

Step 1
Start off by trimming the rhubarb stalks, trim the stalks and discard the base and any leaves. A perfect alternative for this is Easy rhubarb fool. Then cut the stalks into 3cm lengths. Put in a large jar with the sugar, shake everything around in a cocktail shaker and put the lid on and leave overnight.

Step 2
Overnight, the sugar should draw the juice out of the rhubarb. After the night is up, preferably 24 hours add the gin, seal and shake everything around in the cocktail shaker again. Now I know I am going to sound bizarre, but you should leave this for about 4 weeks before drinking it.

Step 3
You can strain the liquor off through a muslin-lined sieve and transfer to a bottle, but I often just leave the rhubarb and booze in the jar and ladle it into drinks that way, after the time has passed the colour will be a lot paler, but this is okay, a good sign. And your rhubarb gin is ready to serve.

Mini egg martini- spring cocktail 3!

This cocktail literally sounds like easter in a drink, and trust me, it tastes deliciousss. It is super quick, super tasty and super easy, so mini egg lovers, this ones for you!

  • 25g mini chocolate eggs
  • 1 tsp honey
  • 25ml crème de cacao
  • 25ml Irish cream
  • 50ml vodka
  • ice

So little ingredients, yet so much flavour!

Method
Step 1
Start off by crushing the mini eggs in a pestle and mortar then tip onto a small plate. Run round the edge of the martini glass with a thin line of honey and run the line in the crushed mini eggs, making a mini egg rim around the glass. Stick your glass into the fridge until it is needed.

Step 2
Pour the crème de cacao, Irish cream and vodka into a cocktail shaker with a handful of ice and shake until the outside of the shaker feels really cold. Strain into your prepared glass and serve. Then the last, but certainly not least spring cocktail is finished and ready to enjoy!
