Summer fruit cake- amazing 1 hour recipe!

Well, say hello to summer with this new drizzled berry fruit cake, trust me after one bite you will be longing for more! It will put you right in the mood to inflate a paddling pool, have a game of rounders, a BBQ and a few summer cocktails and everything that you can associate with summer!

There is such a short list of ingredients to make this delicious cake, which just makes it so much better! It is super easy to make and worth every single ingredient! Here is the list of ingredients that you need in order to make it!

2 medium or large eggs
2 tsp of vanilla extract
175 grams of fruit, stoned and diced weight
140 grams of granulated sugar
1 to 2 tbsp citrus juice (depending on how strong you want the flavour) – lemon, lime or orange
175 grams of very soft butter, plus extra for greasing
175 grams of golden caster sugar
250 grams of self-raising flour

That is it! That is literally all of the ingredients that you need in order to make this amazing fruity cake, and it is still bursting with flavour! So what are we waiting for! Let’s get cooking!

Summer fruit cake method!

Step 1
First thing is first, let’s pre heat our oven! Heat oven to 180C/160C fan/gas 4. Grab your butter and grease a spare 900g/ 2lb loaf tin and line the base and ends with a long strip of baking parchment. Weigh out your butter, caster sugar, your vanilla extract, and your flour and pop it all into a large bowl. Whisk it with a hand whisk or an electric hand whisk- electric will speed up the process a lot- mix it all for 3 to 5 minutes until it is all pale, creamy and thick.

Step 2
Spread one-third of the cake mix into the tin, then scatter over 50 grams of the fruit. Then carefully take another spoonful of the mixture and dot it on top and spread it over using the back of a spoon., then scatter it with another 50 grams of fruit. Finally, plop the rest of the cake mix on top and again carefully spread it over using a desert spoon. Carefully put your cake in the oven and bake it for 1 hr, until an inserted skewer or fork comes out clean.

Step 3
Now onto the third and final step! I told you this was a super easy recipe! Carefully lift your cake back out of the oven and poke small holes in it all using a skewer. Put remaining 75 grams of fruit into a small bowl along with the granulated sugar. Measure out and stir in 1 tbsp of the citrus juice first with a fork, mashing a little of the fruit as you go along. If it is a bland or dry, then add in a splash of more juice and spoon it over the cake. Leave in the tin until the cake is cool and the topping is set and crisp.
