This delicious fillet of beef meal is perfect for a romantic, special date night in with your partner. This perfectly prepared beef steak, with the creamy sauce that goes along with it is perfect for a family dinner, a date night or any occasion that you want this amazing dinner, you do not need an excuse, just cravings!

This perfect fillet of beef only takes 5 minutes to prepare, and around 20 minutes to cook, this steak doesn’t take too long, yet still tastes amazing! The creamy mixed peppercorn sauce also only takes a couple of minutes, therefore this meal is super quick, super easy, and super tasty!

Fillet of beef with mixed peppercorn sauce- ingredients!

Here is a list of ingredients that you need in order to make this delicious dinner;

  • 1 tbsp vegetable oil
  • 25 grams of clarified butter (see Know-how, below)
  • 2 fillet steaks (ideally beef matured for 3-5 weeks) that weigh about 140g/5oz each, best at room temperature
  • knob of butter
  • 2 large shallots, finely chopped
  • 6 medium mushrooms, sliced
  • 2 tsp green and pink peppercorn, crushed
  • 3 tbsp brandy
  • 100ml red wine
  • 200ml of good-quality beef stock
  • 3 tbsp of double cream

that is it! If you wish to have sides with this recipe, I recommend roasted roasted mushroom or tomato, or you could have a nice side salad, onion loaf, or even fries! It is completely up to you how you finish off this perfect meal!

There are only a few simple steps you need to carry out to make your meal full of flavour and tasting great!

Step 1
Start off by grabbing a frying pan and pouring in your measured out oil and your clarified butter. Place your frying pan on a medium to high heat, and season your raw steaks with table salt and plenty of freshly ground black pepper. Next, it is time to cook the steak.

Step 2
Next we are onto cooking the steak! Choose how cooked you like your steak, and this depends how long you are going to cook if for. Here is a list of the time scales. cook 2 minutes each side for rare, 3-4 mins each side for medium-rare and 4-6 mins each side for medium. For well done, cook for 2-4 minutes each side, then turn the heat down and cook for another 4-6 minutes. This goes off a 22mm steak, so use your judgement to decide if it is cooked enough for you!

Make sure you seal around the edges of your steak as many people forget to do this. Once your steak is cooked to your liking, transfer it over to a plate.

Step 3
Add the knob of butter to the pan, then fry the shallots, mushrooms and peppercorns over a medium heat for 5 mins, until the shallots have softened and the mushrooms browned. Transfer your steak back into the pan. Heat the brandy in a metal ladle, light with a match then carefully pour into the hot pan, standing as far back as you can. Once the pan has stopped flaming, remove the steaks again.

Step 4
Next pour the wine into the pan and turn up the heat and boil this rapidly, until the wine has reduced by roughly half, this should take around 5 minutes. Once this has reduced, add in the stock to the wine and reduce again, this time by two-thirds. Stir the cream in to the sauce and allow it to thicken slightly. Check the sauce for seasoning, then return the fillets to the pan to warm through, spooning the sauce over.
