’15’ cake- one of my most delicious tray bakes!

This 15 cake recipe is one of my favourite to make, it is actually super, super easy to make, it tastes so good, it has ingredients that the kids and the parents will like- marshmallows for the kids and cherry’s for the adults- it just has so many positives to making it! It can also be known as cherry mallow slice, however the recipe’s name comes from the fact that a set of fifteen buns is typically made with 15 digestive biscuits, 15 marshmallows and 15 glacé cherries, which are combined with condensed milk and desiccated coconut.

This only takes 20 minutes to prepare, however it will take at least 4 hours to chill so make sure you make it in plenty of time before you want to serve, and there is barely any ingredients! So what are we waiting for? Let’s get started!

15 cake- method and recipe!

The method is super easy and super fast and don’t forget, extremely fun! So what are we waiting for, lets get baking!

Step 1
Start off by putting your digestive biscuits in a plastic bag and add another one on top incase it bursts when you are crushing the digestive biscuits, and crush them with the end of a rolling pin until it is all bread crumb consistency, or you can blend the biscuits up in a food processor. Once they are crushed, pour them into a large bowl and put them to the side fir the time being while you prepare your other ingredients.

Step 2
weigh out all your marshmallows in a side bowl and then chop each marshmallow in half, or if you would rather have smaller chunks cut them into quarters, into four pieces. Then, cut your cherry’s into the 2 or 4 again just as you did with the marshmallows and pop these in the same side bowl as the marshmallows, while out you measure out the correct amount of condense milk.

Step 3
Add the cherries and the mallows to the bowl with the crushed digestives and stir them all through. Progressively add the condensed milk and stir it through until it is all combined and you have a sticky mixture. If it’s too dry, add a splash more condensed milk.

Step 4
Sprinkle most of the coconut over a large piece of cling film or parchment paper/ baking paper. Tip the mixture onto the coconut and shape into a long sausage, about 30 x 5cm. Sprinkle some more of your coconut over the top of the log and wrap the parchment paper tightly around it, twisting the ends together. Leave in the fridge to chill for 4 to 6 hrs, then cut into 15 slices and serve.
