lamb chops, sweet potato’s, what sounds like a perfect Sunday dinner more? these super easy, super quick and super tasty minted lamb chops are ready in 25 minutes and give you the rest of your Sunday to be lazy! This dish is not only perfect for lazy Sunday nights, it is perfect for a speedy week night dinners, family dinners, fancy dinners, date night dinners, and so much more, these lamb chops and smoked paprika sweet potatoes are always the best choice!

It only takes 25 minutes to make, only 10 minutes to prep and 15 to cook, and this recipe serves 2 people! It is all super easy, super tasty, and it is super quick to make, so why are you not cooking yet!

Lamb chop and smoked paprika sweet potatoes ingredients!

There is so little ingredients in this delicious meal, yet it is still full of so much flavour! all you need is these simple ingredients to make the meal and you are good to go!

-½ small pack mint, chopped (reserve a few leaves to serve)
-1 garlic clove, crushed
-2 tbsp olive oil
-4 lamb chops
-2 sweet potatoes, cubed
-1 red onion, cut into wedges
-1 tsp smoked paprika
If you want to make the lemon yoghurt
-35g feta
-75ml natural yogurt
-½ lemon, juiced

Step 1
Start off by mixing the mint and the garlic with 1 tbsp of the olive oil and some salt and pepper seasoning, then using a pastry brush, rub this mix all over your chops. Heat up a frying pan with a splash of oil over a medium to high heat and holding the chops fat-side down, fry until the fat is golden for around 2 mins. After you have done this, lie flat and fry for 3 minutes either side. Once these have fried cover with foil and set it to the side for the meantime.

Step 2
Meanwhile your lamb chops are resting at the side,  put the sweet potatoes in a bowl, cover with cling film and microwave on high for 8 mins. Chop up your red onion and put it in the pan you used for your chops and fry these over a medium heat for 3 to 5 minutes until they have went soft but crispy!

Step 3
Scatter in the paprika to the pan and cook it for 2 mins, then toss in the sweet potato. Season with salt and pepper. To make your yoghurt for the topping (this is optional), mash up the feta with a fork, whisk with the yogurt and lemon juice, season well, then add enough water to it to make it a drizzling consistency.
