One onion, chopped finely
One tablespoon of olive oil
Cooking 100g/3½oz Chorizo
300g/10½oz of minced pork
Tomato ketchup, 2 tablespoons
Worcestershire sauce (one tablespoon)
Sweet smoked paprika, ½ teaspoon
Two tablespoons of chopped coriander leaves
Two eggs that are free-range
Six water biscuits, smashed finely
½ teaspoon table salt, freshly ground black pepper, and salt

Six tablespoons of mayonnaise
One red chilli, chopped finely
Two teaspoons of sriracha sauce, or hot chilli sauce
Eight pickled gherkins, cut coarsely

Step 1
Heat a drizzle of olive oil in a frying pan over medium heat. Add the chopped onion along with a pinch of salt and a dash of freshly ground black pepper. Cook, stirring occasionally, for about 5 to 7 minutes, or until the onion becomes soft, translucent, and fragrant. Once softened, remove the pan from the heat and set the onion aside to cool slightly before adding it to the rest of your ingredients.
Step 2
To prepare the patties, start by removing the skin from the chorizo. Finely dice or crumble the meat using a sharp knife, or for ease and a finer texture, pulse it briefly in a small food processor if available. Transfer the chorizo to a large mixing bowl, then add the remaining patty ingredients, along with the cooled, cooked onions. Mix everything together thoroughly using a spoon or your hands until the mixture is evenly combined and well bound, ready for shaping into patties
Step 3
Once the mixture is fully combined, divide it evenly and shape it into four round, firm patties using your hands. Aim for a consistent thickness to ensure even cooking. Arrange the patties on a plate or tray lined with parchment paper, then cover them loosely with plastic wrap or a lid. Place the patties in the refrigerator to chill for at least 2 hours—this helps them firm up and hold their shape better during cooking.
Step 4
If you’re planning ahead, you can prepare them up to 24 hours in advance and leave them covered in the fridge until you’re ready to cook. This not only enhances the flavor but also makes meal prep easier when you’re short on time.
Step 5
While the patties are chilling in the fridge, take a small mixing bowl and combine the mayonnaise with the finely chopped red chilli, a spoonful of sriracha for heat, and the diced gherkins for a tangy crunch. Stir the ingredients together until the mixture is smooth and evenly blended, creating a creamy, spicy, and slightly sweet sauce that’s perfect for complementing the richness of the patties. Once mixed, set the bowl aside—either at room temperature if you’ll be serving soon, or in the fridge if you’re preparing in advance—to allow the flavors to meld together beautifully.
Step 6
Preheat your oven to 200°C (180°C for fan ovens) or Gas Mark 6. This ensures the oven reaches the right temperature by the time you’re ready to cook, allowing for even and efficient roasting or baking. Giving the oven enough time to fully heat up is key to achieving the best texture and flavor in your finished dish.
Step 7
In a big frying pan, heat a small amount of oil over medium-high heat. Transfer the patties to a roasting tray after they are heated and have been fried for 2½ to 3½ minutes on each side until they are dark brown.
Step 8
Place the patties on a baking tray lined with parchment paper or lightly greased to prevent sticking. Transfer them to the preheated oven and cook for 10 to 15 minutes, or until they are fully cooked through and the juices run clear when pierced—this indicates that the meat is done and safe to eat.
Step 9
For an extra layer of flavor, top each burger with a slice of cheddar cheese during the final 5 minutes of cooking. Allow the cheese to melt gently over the patties, creating a rich, gooey topping that perfectly complements the spicy, savory flavors of the chorizo.
Step 10
To serve, begin by slicing the bread buns in half horizontally. Lightly toast them either under the grill, in a dry pan, or in the oven for a few minutes, just until the edges are golden and slightly crisp—this adds both texture and warmth. Once toasted, generously spread the prepared spicy mayonnaise on the cut sides of both the top and bottom halves of each bun.
