One pan gluten free lasagne- ingredient list!

Ingredient list- here is the short list of ingredients that are needed in order to get this one pan gluten free lasagne bursting with delicious flavour that will make your mouth melt at the thought!
1 tablespoon oil infused with garlic
One chopped courgette, 100g/3½oz of finely chopped leek (about one large leek), and 500g/1 pound Two ounces of beef mince
400g of chopped tomatoes in a tin
Two tablespoons of tomato purée
Gluten-free beef or vegetable stock, 150–200ml/5–7fl oz
1 tablespoon of dried herbs, blended
6–8 gluten-free lasagne sheets
Three tablespoons of cream cheese or mascarpone
Two big handfuls of shredded cheddar or mozzarella (or both)
A pinch of ground black pepper and salt

One pan gluten free lasagne- step by step instruction method!

Step 1
Begin by adding the garlic-infused oil to a large, shallow ovenproof pan—ideally around 30cm (12 inches) in diameter—to ensure even cooking and enough space for layering later on. Set the pan over a medium heat and allow the oil to warm through gently, releasing its subtle garlicky aroma. Once the oil is heated, add the diced courgettes and finely chopped leeks to the pan. Stir well to coat the vegetables evenly in the oil, and let them cook for several minutes, stirring occasionally. Allow the courgettes and leeks to soften and become slightly golden at the edges, releasing their natural sweetness and forming a flavorful base for your lasagne.
Step 2
Once the courgettes and leeks have softened and started to take on a light golden color, add the beef mince to the pan. Use a wooden spoon or spatula to break the mince up into small pieces, ensuring it cooks evenly. Continue to fry the meat over medium heat for several minutes, stirring regularly, until it is fully browned and any excess moisture has evaporated. The beef should be rich in colour and starting to develop a deeper flavour as it cooks.
Step 3
Next, add the chopped tomatoes, tomato purée, and your choice of stock—whether beef, vegetable, or gluten-free bouillon—for added depth. Sprinkle in the dried mixed herbs and season generously with salt and freshly ground black pepper to taste. Stir the mixture thoroughly to combine all the ingredients, making sure the vegetables and meat are evenly coated in the rich tomato sauce.
Step 4
Once everything is well mixed, reduce the heat slightly and allow the sauce to simmer gently for around 10 minutes. This will help the flavours meld together and the sauce to thicken slightly, creating a hearty, well-balanced base for your lasagne.
Step 5
Once the sauce has simmered and thickened slightly, it’s time to add the lasagne sheets. Take your gluten-free lasagne sheets and break each one into 2 to 4 pieces by hand. Don’t worry about making them perfectly even—irregular shapes are actually ideal for this rustic, all-in-one dish. Gently push the broken pasta pieces down into the sauce one by one, making sure they’re well distributed throughout the pan rather than just sitting on top. Place them at different angles and depths so they cook evenly and absorb the flavorful sauce as they soften.
*tip- Avoid stacking them all in one layer; instead, scatter them randomly and press them lightly into the mixture with the back of your spoon. This creates a more interesting texture and ensures that every bite includes both tender pasta and the rich beef and vegetable sauce. The pasta will cook right in the pan, soaking up the savory tomato base and helping to thicken the dish further as it bakes.*
Step 6
Allow the lasagne to simmer gently on the stovetop for 10 to 15 minutes, keeping the heat at a medium-low level to avoid scorching the bottom. During this time, the pasta will begin to soften and absorb the rich, flavorful sauce. As the lasagne sheets start to become more flexible and pliable, you can gently nudge them around with a spoon or spatula to ensure even cooking and prevent them from sticking together. Don’t be afraid to rearrange a few pieces slightly—this helps the sauce seep between the layers and encourages a more balanced texture throughout the dish.
Step 7
Personally, I like to have a few of the pasta pieces poking up above the surface of the sauce, as they crisp up slightly in the oven and add a lovely contrast in texture. Others can remain nestled beneath the sauce, staying tender and well-coated in the tomato and beef mixture. This mix of textures—from soft and saucy to slightly golden and chewy—makes each bite more interesting and satisfying.
Step 8
Add a dollop of mascarpone (or cream cheese) and gently swirl it in the sauce. You don’t have to incorporate it completely. Set the grill’s temperature to medium. After adding the shredded cheese on top, place it on the grill for five minutes, or until it is golden-brown.
Your one pan meal is complete and ready to be served and enjoyed!
