In this version, a block of feta is roasted in the oven alongside sweet cherry tomatoes, garlic, and a drizzle of olive oil until everything is bubbling, golden, and irresistibly fragrant. Then, instead of tossing it with pasta, we fold in buttery cannellini or lima beans—warmed through and infused with all that tangy, garlicky goodness.

200g/7oz of feta
Cherry tomatoes, 250g/9oz
400g of drained tin butter beans, 4 peeled garlic cloves, 2 tablespoons olive oil, and extra for sprinkling
Two teaspoons of dried Italian herbs
If necessary, use a splash of milk to loosen 150g/5½oz of frozen spinach.
freshly ground black pepper and salt

Ingredient list to serve with;
Two thick sourdough slices, toasted, and a handful of shredded mint leaves (optional)
½ tsp optional chilli powder

Step 1
Start by preheating your oven to 180°C (160°C for fan ovens) or Gas Mark 4. Getting the oven up to temperature before you begin assembling the dish ensures everything bakes evenly and your feta and tomatoes roast perfectly. This moderate heat allows the feta to soften and turn golden at the edges without drying out, while the tomatoes burst and release their sweet juices, creating the base of a delicious sauce. While the oven heats up, you can start preparing the rest of the ingredients.

Step 2
Arrange the feta block in the centre of a baking dish with the drained butter beans and cherry tomatoes surrounding it. Put a clove of garlic in every corner. Add the Italian herbs, pepper, and a pinch of salt after drizzling with olive oil. Mix the beans and tomatoes thoroughly so that the oil and herbs are all over them.

Step 3
Once everything is arranged in the baking dish—your block of feta nestled among the cherry tomatoes, garlic, olive oil, and seasonings—place the dish in your preheated oven. Bake for 20 minutes, allowing the feta to soften and the tomatoes to begin bursting and caramelizing slightly around the edges. Step 5
Follow the directions on the package to cook the spinach. After letting it cool a little, press out as much water as possible.

Step 6
After the beans are cooked, whisk in the spinach and, if necessary, a little milk to loosen the mixture.

Step 7
Top with toasted bread, drizzle with olive oil, and garnish with chopped mint and chilli flakes, if using.
