Three tablespoons of olive oil
One finely sliced white onion, two garlic cloves, and 300g (10½oz) of sausages (spicy or herbaceous both work well), with the skins taken off and the sausages torn up
One stock cube is used to make 150ml/¼ pt chicken stock.
Baby spinach, 150g/5½oz
Freshly grated nutmeg, ½ teaspoon
500g/1 pound 2 oz of gnocchi, 150g/5½ oz of mascarpone, a handful of grated Parmesan, 100g/3½ oz of frozen petit pois, a handful of shredded mature cheddar, salt, and freshly ground black pepper

There is just a few simple steps for you to follow before your dish is finished and ready to serve!

Step 1
In an ovenproof skillet over medium heat, add the oil and then the onion. Add the garlic and season with salt and pepper after cooking for 3 to 5 minutes, or until the garlic is tender and beginning to colour.

Step 2
Add the sausage meat and raise the heat to high. Fry for 5 to 7 minutes, breaking up any big lumps with your spoon, or until the meat is golden brown. Scrape the bottom of the pan and add the chicken stock to deglaze it. Reduce the heat and stir in the spinach and nutmeg once the liquid has reduced by half. Set the grill’s temperature to high.

Step 3
Add the mascarpone, half of the Parmesan, and the peas once the spinach has wilted. Add salt and pepper for seasoning. Take off the heat after stirring until the mascarpone has melted.

Step 4
Add the gnocchi to a large pot of boiling salted water. When they float to the top (about 1-2 minutes), remove from the pan with a slotted spoon, then immediately add to the sauce and thoroughly mix.

Step 5
Top with the grated cheddar and remaining Parmesan. Grill for around 10 minutes until golden and bubbling. Serve immediately.
